What Now – Part 2

Darkness soon came including moths and mosquitos. These bugs have been Sweets biggest pet peeve. Wherever you go, they go; worst of all, inside the tent. We have gotten into routine where we turn off our lights before hand and hop right into the tent before any bugs can invade our space.img_8349 I was starving like no other, and couldn’t wait to get cooking. Oh, did we mention we got an outdoor mini stovetop? Well we did, and absolutely love it! We hadn’t expressed this in any of our previous posts but when it came to food, it was a bit hard on us to figure out a day-to-day meal plan. Not having a kitchen with a stovetop or microwave made what we ate limiting especially when hanging around camp for that matter, it’s not as though we are experienced hunters or nature survivalists where we can seek food for ourselves.

Luckily, Spiffy found this amazing outdoor stovetop online that would allow us to cook just about anything to our desire. The best part about it is that it’s easy to use.

If you notice, it is like a single stovetop burner similar to that of a burner on your stove. Isn’t that the coolest? Even though it’s pretty explanatory from looking at the pictures themselves, the burner has two openings where you place twigs and can use a lighter to get it started or if your really up to the challenge, you can do a self made fire and then insert it. It takes about 15 to 20 minutes to fully get it going but once you do, It does the job. My only recommendation would be to not let the flame go out or else it’s a pain to get going again. Therefore, collect extra twigs and insert them as you cook to maintain the fire and have consistency.

By the time we got the burner going, it was pitch dark. It was as though we were chasing time but time was not on our side. I was having trouble keeping the fire going; it had been my first time using the EcoZoom. Spiffy came to my rescue and took over, and sure enough he got it going again. I was pleasantly surprised to see the juices boiling in our cast-iron  pan; I was already getting excited. I threw in the ingredients and before I new it, we were ready to eat. I must say there is something tasty about campfire food, it had a natural smoke flavor to it, that was simply to die for.

If you looking for some simple campfire recipes, here you go:

Sunny-Side Up Chickpea Bake

  • 1 tablespoon oil
  • 1  zucchini sliced 
  • 3 mini sweet peppers cut into 1/4-inch slices
  • 1 (15 oz) can chickpeas drained
  • teaspoon of pepper
  • 1/2 teaspoon salt plus more to taste

Teriyeki Chicken Stir Fry

  • 1 cup olives pitted & halved
  • 1/2 cup teriyeki sauce
  • 1 tbsp oil oil
  • 1/4 cup capers
  • 6 cloves chopped garlic
  • 2 bay leaves
  • 1 teaspoon salt
  • 4 skinless chicken thighs

One-Pot Nachos

  • 1 tablespoon of olive oil
  • 1/2 lb tortilla chips
  • 1 (7.75 oz) jar of chunky salsa
  • 1 cup shredded Mexican cheese blend
  • 1 (14.5 oz) can black beans drained
  • 1 large avocado cubed
  • 4-5 green onions sliced
  • handful of fresh cilantro chopped
  • 1 small lime cut into wedges

Chcken Veggie Kabobs

  • Two chicken thighs cut up
  • Whole onion sliced
  • Red pepper sliced
  • Zuchini sliced
  • Dash basil

Chicken Sausage Skewers

  • Whole chicken sausage
  • Skewer

      1. Yes they’re brilliant. With having to be spare with fuel & energy on the boat I’m sure we’ll use ours a lot. You may just spot it in a future post 😉

    Well those recipes were fun at the end – and right about the time I was wondering if u were doing a product promo u noted you were not affiliated – ha!
    And cool stove – my partner has had two over the years – both run on propane – the second one is better – but amazing how lightweight they were – and this one looks light and versatile Also

    1. We had a feeling with detailing our excitement, that someone was bound to think we were promoting it lol. Glad I noted that at the end. Oh goodness, propane would probably be a lot easier to use and cook with, talk about a time saver as appose to our use of twigs method. I was amazed myself when we bout it how easy of was to travel with.

    I LOVE camp fire cooking, the whole ritual including the glass or 2 of wine while watching it all simmer and smelling the savoury smoke mixed with food aroma and the smoke in your eyes when the wind direction changes. I miss it…. we spent years roaming Australia, but now we are getting older and are home based now.

    1. OH so you know what all the hype is about when it comes to camping then? 🙂 It’s nice and relaxing for sure grilling out on a campfire taking all of nature in.
